The City of Orlando requires food service establishments that produce fats, oils, and grease (FOG) to register for a Grease Management Program Certificate through its Oil and Grease Management Program. The program exists to protect the city’s sanitary sewer collection system, which spans more than 800 miles of public lines. When FOG enters those lines unchecked, it cools, solidifies, and causes blockages that can back up into neighboring properties and public infrastructure.

The most widely used service benchmark is the 25% rule: a grease trap should be cleaned once accumulated fats, oils, grease, and solids reach 25% of the trap’s liquid capacity. Letting the level climb past that point increases the risk that FOG escapes past the trap’s baffles and enters the downstream pipes. Staying ahead of that threshold helps support compliance and avoids the kind of buildup that turns a routine cleaning into a much longer visit.

What to Expect During a Grease Trap Cleaning

A standard pump-out and cleaning of an outdoor grease interceptor typically takes between 30 minutes and 1.5 hours. The actual time depends on the trap’s accessibility and how much hardened material has built up since the last service. Traps that have gone longer between cleanings often require more work to clear compacted solids from the walls and baffles.

A slight residual odor after cleaning is normal. It usually comes from lingering hydrogen sulfide gas in the vent lines or a small amount of residual sludge on the trap walls and dissipates within a few hours. An odor that’s strong or persists longer than a day is worth investigating. It can indicate a clogged inlet or outlet pipe outside the trap itself, not anything left over from the cleaning.

Why Chemical Products Aren’t the Answer

When a trap seems slow or full between scheduled cleanings, it’s tempting to reach for a chemical drain cleaner or an enzyme treatment. Neither is a good substitute for a pump-out. Chemical cleaners can damage the trap material and, in kitchens connected to a septic system, kill the beneficial bacteria the system depends on.

They often liquefy accumulated grease rather than removing it, which lets the FOG flow past the trap and re-solidify farther downstream in the public sewer.
